A Twist on the Traditional Spam Masubi

As a mom, finding meals that my kids will actually eat can be a challenging task. One thing that they love is Rice and Seaweed, so I figured why not let them try Spam Masubi. But it can get a little messy sometimes when the rice starts falling apart with the Sweet Teriyaki sauce. Thats where my little twist comes in where I use rice paper to wrap it. What is Spam Masubi?
Spam Masubi is a sushi-like snack that consists of a slice of grilled Spam meat, usually seasoned with soy sauce and mirin, wrapped in rice and seaweed. Ingredients You'll Need

1 can of Spam (or any brand)
2 cups of rice (Any rice, but my family loves this rice from China)
Make Teriyaki or just buy ready made ones
3 tablespoon of mirin (soya sauce and mirin 1:1)
Sugar if needed

The Recipe Steps
Step 1: Cook the Rice
First, rinse rice until the water runs clear. This helps remove excess starch and keeps your rice fluffy. Cook the rice in a rice cooker or on the stovetop according to the package instructions.
Step 2: Make Teriyaki
Mix equal parts of mirin and soya sauce and mix them together, stir in some sugar if you like it sweeter
Step 2: Prepare the Spam
Open the can of Spam and cut into thick strips. Heat a non-stick pan over medium heat, il, and fry the Spam strips with the Teriyaki and allow it to caramelize slightly.
Step 3: Assemble the Masubi Roll
Once the rice is cooked, let it cool slightly. Briskly dip the rice paper in a shallow plate, and flick away excess water. Place a piece of nori in the middle of the rice paper and brush it with Teriyaki sauce (you might want to be more generous here for tastier rolls). Put a strip of spam and some rice in the middle. Use the strip of spam to help push the rice and start rolling it gently fold in the sides midway and continue rolling to end.

Batch Prepare: Make a larger batch and store leftovers in the refrigerator. These finish quickly and are great for lunchboxes
Experiment with Veggies: Add cucumber, carrot or avocado strips for extra nutrition, making the dish even more colorful and appealing to the kids.
Use Pre-Cooked Rice: If you're short on time, consider using pre-cooked rice or microwaveable rice bags. You can still season it to your liking.
